As the weather warms up, everyone seems to have grilling on their minds! The wonderful smell of fired up grills accompanies our drives home and makes us long for steaks and burgers. An easy way to incorporate more grilling into your meals is by grilling vegetables. The grill flavor and a nice char on the veggies takes them up a notch! This recipe for simple grilled vegetables involves olive oil and salt and pepper and is easy to assemble.
“It’s amazing how the simplest of recipes are usually the most delicious!
- Cut the zucchini into long slices lengthwise using a large (and very sharp) Kyocera Santoku knife. Cut the onions into thick slices, too.
- Then, spray them all with olive oil on both sides using a Misto Sprayer.
- Sprinkle homemade ranch seasoning on the zucchini. (Just plain sea salt & pepper would work fine, too.)”
