Coffee cake is a great breakfast or brunch food, and it’s pretty much a blank canvas. This organic lemon berry coffee cake can be made with a variety of fruit and is made with natural ingredients like butter, eggs, Einkorn flour, and good vanilla.
“You can make this cake with any type of fruit filling you’d like, originally it calls for cherry pie filling, but the kind at the store has high fructose corn syrup and other nasties, so try making your own homemade pie filling instead!
I use mostly organic ingredients, and threw it all in my Bosch:
- 1 c. soft pastured butter
- 1 c. natural sugar (original recipe called for 1 1/2 c.)
- 4 eggs beaten”
