Gyro meat is a Greek dish that is traditionally roasted on a spit over a flame. Since most of us don’t have that sort of thing available to cook with, this recipe calls for either baking or pan frying the meat. I like to use a mini muffin pan when baking meatballs because it prevents them from rolling around and helps them keep their round shape.
The paleo tzatziki sauce is simple to throw together and can be made a day ahead of time if needed. The meatballs and sauce also taste great served over zucchini noodles. You can make zucchini noodles by using a spiral vegetable slicer or julienne peeler.
