“Do you like sweet potatoes?
For every friend, family member, neighbor, stranger, etc. that asks me about what to eat on a Paleo Diet, I usually respond by saying, “Do you like sweet potatoes?”
If you answered YES to this question, then you are awesome and I already like you a lot. If you answered NO, well…we have some work to do! I still like you though.
All kidding aside, sweet potatoes have become a staple in my household. I’m fairly certain that I have come up with a million different ways to cook them. Let’s just say that I have come a long way from the beginning of my Paleo journey where I microwaved a sweet potato each and every day (which you are more than welcome to do!). This vegetable is so versatile and the options are endless as far as cooking methods go. You can make it savory or sweet. You can shred the potato up to add to a casserole or you can slice it thinly and make your own potato chips.
Today, I’m sharing one of my go-to sweet potato recipes. My Sweet Potato Bites provide a great alternative to your traditional restaurant fries. These are baked, not fried, and I know that they’ll add some pizazz to your next Paleo meal!”
