“HASH. The word itself just sounds messy, doesn’t it? Well this week’s recipe, Sweet Potato and Pork Hash is a combination of ooey-gooey, messy deliciousness and does not disappoint. From the crunchiness of the red and yellow peppers to the flavorful and savory pork chops, not to mention, the perfectly browned sweet potatoes, your taste buds will be doing back flips. You’ll probably ask yourself, “Does this get any better?”
Well, indeed, it does my friends. How about we add one more ingredient to the mix? Something to make it even messier. Let’s top this baby off with a fried egg and let that runny egg yolk cover EVERYTHING!
Now, in all seriousness, this is a dish that is easy to make throughout the week and can definitely become one of your go-to meals. I recommend, however, to PREP, PREP, PREP at the beginning of the week. Plan your meals, cut your vegetables, and cook your meats. Throw all of your ingredients into some Tupperware and throw them in the fridge. It doesn’t have to be fancy. Doing this will ensure your success with the Paleo diet.
