These natural homemade tortillas are made with the heirloom wheat spelt. They do not contain gross ingredients like store-bought tortillas, but are instead made with quality ingredients like good wheat and coconut oil. These spelt tortillas are pliable and tasty and are perfect for dishes like tacos and enchiladas.
“I absolutely refuse to buy tortillas from the store. There are no good brands that are made to my standards. I’ve been making my own tortillas for a few years now. I already have a recipe posted forThe Best Tortillas Ever. Ever since I switched to heirloom wheats like einkorn and spelt, they just haven’t come out the same. They broke when you folded them. Spelt (more than einkorn) can easily sub in a lot of recipes with little modification; especially when the recipes has a lot of ingredients. But for simple bread-y recipes, such as tortillas, you really need to find a recipe that will cater to spelt. So I created this recipe with spelt in mind. I used freshly ground spelt from my Wondermill, but you can use the pre-bagged stuff too, although you may have to add slightly more water.
